I was trying to make an Orange Polenta Cake when much to my dismay I discovered that the recipe called for quick-cook polenta.
We had lots of regular polenta but didn't have quick-cook polenta, nor could we find it at the store.
We did have quick-cook grits though.
So off to the web I went to figure out the difference between grits and polenta. I never quite found a good answer but if there is a difference it's pretty minor. The cake hasn't been eaten yet so I'm not sure if the last minute substitution worked.
One side benefit of this little experiment was that I came across an interesting NPR story on grits.
