Cooking with Fire



Over the years, I've been fortunate to have some incredibly dishes in restuarants; however, I rarely write a post about a specific restaurant. Between Yelp, Chowhound, Zagat, and others I figure there's enough info out there that a post on this lil blog isn't adding much to the party.

Last night, however, was an exception.

From its rustic fire-glowing kitchen, Peasant, located in the NoLita neighborhood of NYC, turns out simple yet amazingly delicious dishes thanks to a wood burning oven, grill and best of all, spit.

Between the three of us there wasn't a single dish that disappointed. The highlights:
  • Pasta with sea urchin...a revelation and I will be trying to replicate this in the near future.
  • Spit roasted suckling pig and lamb...both extraordinarily tender and lip-smacking good.
  • Spit roasted squab...WOW! Possibly one of the best dishes I've ever tasted.
Thanks to Peasant, I'm now intensively researching outdoor firepits and DIY indoor fireplace hacks to fit a spit.
