A Recent Ice Cream: Very Berry

Unconsciously I've taken a bit of a summer vacation away from zee blog so there are quite a few things in the pipeline to post about.  One that comes to mind is an ice cream I made a couple of weeks ago that just might be my favorite so far.  It was a combo of roasted blueberries and raspberries. I called it Very Berry.

There's no recipe to link to since I pretty much winged it based on the strawberry rhubarb ice cream from several weeks ago.

Here are the basics. Post if you have a question.

- 1 pint of blueberries and one pint of raspberries
- 3-4 tablespoons of sugar plus 1 cup (1/3 brown sugar and 2/3 unrefined)
- 1.5 cups of cream
- 1.5 cups of milk
- 4 egg yolks
- 2 tablespoons of vodka

Mix the berries and 3-4 tbsp of sugar and macerate for 15 minutes or so then roast in a flat baking pan for 10-15 minutes or until very soft but not burnt. Take half of the berries and puree in a blender then strain to get the seeds out. Place the strained puree in the fridge to chill out. Take the other half and mash up a bit but not too much and slide it into the fridge in a separate bowl. Make the ice cream base as usual and chill. When the base and puree are have fully cooled down mix together until combined and return to the fridge for a minimum of two hours but ideally overnight.

Churn the base in zee ice cream maker. When done mix in the mashed up berries. Freeze in a container for at least 2 hours.

Get a bowl full, sit back and enjoy.
