When they say from snout to tail some folks really mean it.
Chris Cosentino, the chef in this video, has a restaurant in SF called Incanto. It's one of my favorite restaurants in the city and the only one that I know of that serves cockscombs (those little red fingerlike things on the top of a rooster's head) and they are delicious.
This video isn't for the squeamish but it does show that almost everything is edible.
