This Week's Flavor: Pineapple Granita

A few thousand miles away isn't a good enough reason to not make a tasty frozen treat, especially for family.

When in Rome Hawaii...



Pineapple (locally grown) Granita with Macadamia Nut Milk Chocolate Shortbread cookies. I dialed back the sugar in the granita (the pineapple was super sweet) and added the juice from 1/2 lime.  For the cookies I cut back on the salt, used unsalted mac nuts, and cut the rolled out dough into squares prior to baking.

Both have entered the "must make again" file.
